Wild yeast ferment, minimal intervention. What started as Sauvignon Blanc evolved naturally, with the use of barrel fermentation adding to the complexity. The aromas of tropical fruit and citrus intertwine with delicate smoky notes. The palate reveals a symphony of flavours that highlight nougat, honey, and apricots which is complemented by a subtle touch of toasty oak.
